How can I make a cheesy dish healthy?

Cheese is a healthy food because it's loaded with calcium and good quality protein. Unfortunately, it's also high in fat, and not just any fat, unhealthy saturated fat. If you really enjoy that cheesy flavor there isn't too much you can do to replace it and keep 100% of the taste. You can try moving to low fat cheeses. These can cut the fat content in half. If you don't like the taste of low fat cheese, try mixing a bit of it with the kind you usually use. The taste difference will be noticeably less and you'll walk away with that delicious flavor you're used to. You can also try fake soy cheese which is made out of mostly soy milk and a small amount of milk protein (casein). Soy cheese has considerably less fat than regular cheese. Just like low fat cheese, if you're not satisfied with the taste, try mixing the two types together. For more healthy meal preparation techniques, visit the Guide to Cooking.
